Breakfast on the go - Oatmeal Chocolate Chip Muffins

This week school started for us, My son and I are so excited about this new adventure he. My son is a picky eater and I wanted something that he would like and would also be great food on the go. Look no further than these delish Oatmeal Chocolate chip muffins ( you could also hide veggies in these as well for your extra picky eater)

We made them the night before school which made my kids more excited to eat them. They are perfect for little hands to take on the go. You may need to make more than 12 because these will not last long at all.

Oatmeal Chocolate Chip Muffin

Perfect for anyone on the go. 

  • 1 1/4 Cups Quick Cooking Oats

  • 1 1/4 Cups Milk

  • 1 egg

  • 1/2 cup Olive oil

  • 1/2 cup brown sugar

  • 1/2 cup Semisweet Chocolate Chips

  • 1 1/4 cup All- purpose flour

  • 4 tsp Baking Powder

  • 1 tsp salt

  1. 1. Combine oats and milk and let stand for 15 min (preheat oven to 400 degrees)

  2. 2. Stir egg, oil, brown sugar, chocolate chips into the oat and milk mixture (if you choose to add veggies add them in as well)

  3. 3. Combine flour, baking powder, and salt. Add oat mixture to the flour mixture.

  4. 4. Grease each cup of 12 cup muffin tin and fill each one 2/3 of the way full (an ice cream scooper is a perfect measurement) sprinkle a little brown sugar on the top of the uncooked muffins.

  5. 5. Bake at 400 degrees F for 20 -25 min
